Wild White Peony (Bai Mu Dan) is a white tea made from spring buds and the first two leaves, handpicked from wild-growing tea bushes in Panxi town, Fuding — one of the most renowned areas for white tea in Fujian Province. "Wild" here means the bushes grow naturally without pesticides, giving the tea a cleaner character. We visited this tea garden ourselves and saw how the plants thrive in their natural environment.

This 2025 spring harvest stands out for its higher proportion of silvery-white buds compared to typical White Peony. More buds mean a fresher, brighter taste with a lingering sweet aftertaste. The buds also carry more L-theanine — the amino acid responsible for that relaxed but focused feeling some people notice with white tea.

How it tastes

Gentle and floral with subtle vegetal notes, clean and smooth without any astringency. The sweet aftertaste lingers — it's one of the first things people comment on. The bud-to-leaf ratio gives this a brighter, lighter character than most White Peony on the market.

One of our customers captured it well when he first tried it in our shop: "I've never seen a White Peony with this many white buds — the sweet aftertaste is just beautiful." Another regular, Zoe, told us this White Peony has become her daily go-to — she's on her third pack now. That's the kind of tea this is: it doesn't shout for attention, but it keeps you coming back.

A note from Joanne: "This is the White Peony I drink most mornings before meditation. The L-theanine gives you a calm focus that's different from coffee — alert but not wired. When I visited the Panxi garden, I could see why the tea tastes so clean. The bushes are spread across a hillside, no crowding, no chemicals. I think you can taste that space in the cup."

Brewing instructions

Western brewing: 1.5g per 250ml teapot. 90°C water. Steep 3 minutes — you can get 2 good brews from the same leaves.

Gongfu brewing: 4g per 120ml gaiwan or teapot. Pre-warm the vessel. 90°C water, steep 30 seconds. Up to 10 infusions.

Storage

Store in an airtight container in a cool, dark place away from light and moisture.
