Our white tea collection
When I first discovered white tea during my studies with Ms. Xiao, I'll admit I wasn't immediately drawn to it. Coming from drinking stronger teas, white tea seemed almost... too gentle. But that's exactly what makes this collection so special to me now.
Why white tea captured my heart
I've found that white tea teaches you to slow down in ways other teas simply can't. Unlike the bold presence of a black tea or the grassy intensity of green tea, white tea whispers rather than shouts. In my experience, this makes it perfect for those moments when you want tea to accompany your thoughts rather than interrupt them.
What fascinates me most about our white tea selection is how it spans such a remarkable range of time. We have teas from as far back as our Wild Aged White Tea from the first harvest of 2008, all the way to our fresh Gardenia White Tea from spring 2023. Each one tells a different story of how time and patience can transform leaves.
The art of natural blending
Two of our white teas showcase something I'm particularly passionate about - how natural ingredients can enhance rather than mask tea's character. Our Rose Mandarin White combines aged white tea from 2012 with mandarin peels that were aged separately since 2016, plus rose petals. I've found this creates layers of flavour that unfold differently with each sip. The citrus notes from the aged mandarin peels bring warmth, while the rose petals add a gentle floral touch that never overwhelms the tea's natural sweetness.
Similarly, our Gardenia White Tea pairs White Peony (Bai Mudan) with whole dried gardenia flowers. The gardenia provides a subtle fragrance that feels like walking through a blooming garden, but the White Peony remains the star. These are natural blends in the truest sense - no artificial flavours, colours, or preservatives, just ingredients that complement each other naturally.
Understanding white tea grades
Through my tea education, I learned that white tea has its own hierarchy, quite different from other tea types. Our collection includes several traditional grades that each offer unique characteristics:
Silver Needles represents the pinnacle of white tea - made only from unopened buds covered in silvery down. Our Silver Needles from 2018 is the exception in our collection with higher caffeine content, making it suitable for morning drinking. I've found its floral notes and hay-like undertones are most pronounced when brewed gently.
White Peony (Bai Mudan) includes both buds and young leaves, creating a more complex flavour profile. Our Premium White Peony from 2018 shows how age develops nutty undertones alongside the characteristic floral notes.
Gong Mei and Shou Mei are made from slightly more mature leaves, resulting in a fuller body. Our Gong Mei from 2020 and Christmas Nectar (which is Shou Mei style) both have that distinctive fresh hay character that I find particularly comforting.
The magic of aging
In my experience, aged white teas are where things get really interesting. Our Wild Aged White Tea Cake from 2008 and Aged White Tea from 2012 demonstrate how white tea transforms over time. The fresh, delicate notes evolve into something deeper - herbaceous qualities emerge, and the sweetness becomes more like honey than the light, floral sweetness of young white tea.
I've found these aged teas are perfect for experimenting with longer brewing methods. After your initial infusions, you can actually boil the used leaves for a few minutes to extract even richer flavours. It's a technique that works particularly well with aged whites and creates an entirely different tea experience.
Regional character matters
While most of our white teas come from Fujian Province, where white tea originated, our Yunnan White Tea from 2021 shows how terroir influences character. Coming from pesticide-free arbor trees in Xigui, it has citrus and woody notes with mint undertones that you won't find in Fujian whites. The honey sweetness is more pronounced, and I've found it stands up well to higher brewing temperatures.
Why white tea supports focus and calm
Here's something I find fascinating about white tea - it contains the highest levels of L-theanine among all tea types. L-theanine is an amino acid that promotes calm focus, which is why I find myself reaching for white tea when I'm writing or need to concentrate for long periods. Many of our customers tell me they've discovered the same thing - white tea provides gentle mental clarity without the jitters that stronger teas can sometimes cause.
In my experience, this makes white tea perfect for work sessions or afternoon focus time. The combination of minimal caffeine with high L-theanine creates what I call "alert relaxation" - you feel clear and present, but not wired or anxious.
