Our Japanese green tea collection features teas from Uji in Kyoto Prefecture — one of Japan's oldest and most respected tea-producing regions. Japanese green teas are steamed during processing (unlike Chinese greens which are pan-fired), giving them a brighter, more vegetal character.
Matcha
We carry two ceremonial grade matchas, both stone-ground in Uji:
HIJIRI-NO-SATO ($38/25g) — smooth, well-balanced, good for everyday drinking, lattes, and cold brew. A solid starting point if you're new to ceremonial matcha.
SEIFU ($58/25g) — premium grade, richer and more complex. Suitable for koicha (thick tea) and serious tea ceremony preparation.
Gyokuro
Gyokuro is Japan's shade-grown green tea — covered for 20-30 days before harvest, which produces a deep umami flavour with very little bitterness. It's the loose-leaf counterpart to matcha's powdered form, and brewed at a lower temperature than other green teas.
Matcha tools
Traditional matcha preparation uses a bamboo whisk, scoop, and bowl. We stock these individually or as sets — see our matcha tea sets collection for options including whisks, scoops, and bowls.
If you mainly want to make matcha lattes, our glass matcha bowl with pouring spout is a practical option — you can whisk the matcha right in the bowl, then pour it straight into a cup of milk through the spout. It's the same bowl we use at the Tea Bar when making matcha lattes. It also doubles as a glass fairness cup for gongfu tea if you brew Chinese tea as well.
Try before you buy
All our Japanese teas are available at our Salamanca Tea Bar in Hobart. Matcha is one of our most popular things to try in-store — it's a good way to see the difference that proper preparation makes before choosing between our two grades.
